RECIPE FOR CHICKEN IN CASHEW NUT SAUCE

Ingredients:

• Chicken (Cut, wash, season and cook)

• Cashew nuts (Blended)

• Vegetable oil

• Onions (sliced)

• Fresh Tomatoes – 2 or 3 (Blended)

• Ginger (I used powdered)

• Garlic (I used powdered)

• Seasoning cubes

• Salt (to taste)

• Red Pepper

• Green Pepper

• A dash of dark soy sauce Preparation:

• Having seasoned and cooked the chicken

• Put a skillet or pot on fire

• Pour in some vegetable oil and heat

• Add onions and stir

• Put in the chicken to fry a bit

• Pour in the blended tomatoes

• Add ginger, garlic and red pepper

• Dissolve the blended cashew in a some chicken stock and pour in

• Add a dash of soy sauce (this is optional, I loved the dark colour)

• Add more chicken stock depending on the consistency you want

• Taste and correct seasoning

• Add the green peppers last

Serve with boiled rice or potatoes
