How to Make Coconut Rice Nigerian Style

Learn the modern way of making nigerian coconut rice at home.

INGREDIENTS:

Rice,

Carrot,

Greenpepper,

Stock fish

Coconut milk,

Vegtable,

Red pepper,

Salt,

Maggi,

Diced onion,

Margarine

Titus fish

Method

1. Wash your rice with little salt and water then pour in a clean pot.

2. Add about 3 to 4 cups of water and put on fire for about 5 mins

3. Add rodo either whole or grated, salt, coconutmilk and the already boiled stockfish and allow to boil for 15 to 20 mins.

4. Pour 2 serving spoon of vegetable oil into the frying pan and add your already grinded fresh pepper.

5. Add the already boiled and debone titus fish and stir until it is done.

6. Remove from fire and garnish with shredded carrot, diced green pepper and saute vegetable.

Serve hot with chilled juice.
