What type of rice does not stick together when making fried rice?

Many people think that it's from the type of rice they are cooking that determine whether it will stick when doing fried rice or not. Although different rice have different feel and textures, I would like to give you some tips on how to make your fried rice in such a way that will not stick like tuwon shinkafa.

ATTENTION: Overcooking is the problem and not necessarily the rice. Any good rice will stick when left for a long time to per boil.

1. Parboil for about 5 to 7 minutes atleast, as you wouldn't want the flavor in the rice to go too.

Wash with salt from the start. Don't allow water to dry as usual. Watch it closely.

2. Boil with lots of water and drain immediately after the supposed minutes. The rice suppose to relax in the pot during per boiling.

3.An alternative to parboiling rice if you want to make fried rice soaking with salt. This usually works depending on the quality of rice. If you're using a fine made type, you may not need to wash several times. But much water will still be needed when cooking.

4. To keep rice from sticking put vegetable oil in your rice when parboiling .

5. Add fresh cool water to the rice after parboiling and for rinsing.

THE PERFECT WAY OF MAKING FRIED RICE

First parboil the rice with very hot boiling water for a short time depending on the type of rice you are using. After parboiling the rice, allow the rice to dry off water by putting the washed rice in a sieve or colander so as to dry out the water. This is a very important stage.

NOTE: get a little oil and fry a lttle whole dry pepper in the oil and let it season the oil. Then immediately add in your dryed washed rice and fry it with the little peppered infused oil for a few minutes and scope out on a sieve to remove any excess oil from the rice.

This method helps to seal wax the rice and keep it seperated, preventing it from sticking.

UPDATE:

Before all these, you must have gotten your meat and its stock. Get your rice in a hot empty pot, adjust the oil if the oily rice isn't enough.

Gradually scope hot meat stock to the rice like you are preparing a rissotto, until you scope in all the stock and allow it to cook up the rice. And when almost cooked, you can add your sauted vegetables to the rice. I bet you, your fried rice will come out seperated and beauiful.

NOTE: Your spices should be incoperated into the hot stock. You can use the worst rice to get this result and also the best rice can still give you a tuwo shinkafa rice if not properly parboiled and cooked.
