Morning foodies, so couldn't sleep and decided to bake.
Here my almond coconut citrus flavour cake and phisayo, I wanted to braid the challah, but am getting there. Will keep trying.
Recipe for the cake.
Flour 300g
Butter 225g
Sugar 225g
Baking powder 1.24 tsp
Eggs 3
Coconut flakes 1/3 cup
Lemon rind 1 tbsp
Orange extract 1 tsp
Milk flavour 2 tsp
1 tbsp water
Almonds, blanched 50g
Method:
Cream butter and sugar until light and fluffy
Add the egg, one at a time.
Mix well
Add all extract, flavour and lemon rind and water.
Remove from mixer, add flour and baking powder.
Add coconut flakes and mix well.
Soak almond in hot water to remove its brown skins and chop.
Line an 8" pan with parchment paper and pour butter in.
Sprinkle chopped almond and bake in a preheated oven for 45 min.
