Basque Poached Eggs Recipe - Served with Boiled Plantains and Blackpepper

Kids off for summet, just finished my house chores and am treating myself to breakfast/ brunch.

Basque poached eggs served with boiled plantains with Blackpepper and freshly squeezed orange juice to go.

For the egg, you need

Tomatoes, diced

Cayenne peppers, julienne

Scotch bonnet, diced

Garlic, finely chopped

Onions, finely chopped

1/2 tsp dried basil

Extra virgin olive oil, 1 tbsp

Salt

Egg

1 tbsp distilled vinegar

Blackpepper.

Method.

Put oil in pan, fry onion and garlic with a little salt until soft.

Add the peppers and tomato and basil and cover to simmer in its own juice for 8mins

Set aside.

Put water in a small pot and bring to a boil.

Add the vinegar and reduce heat.

The water should still have tiny bubbles simmering gently.

Crack your egg in a small cup and gently pour into the water. I like my eggs cooked well, so leave for 7 min.

Serve. Enjoy

Note: Cayenne is Shonbo or Bawa.
