1. Buy your green plantain.
2. Freeze UNPEELED for at least 2 days. You can buy in bulk so you can have in the freezer for two weeks.
3. Bring out of freezer and leave to defrost. Room temperature is faster.
4. Once defrosted, peel and cut up into small pieces.
5. Add a little water and blend 'til you have a smooth not too thick consistency.
6. Beat in a pot over fire like you make Semo etc. Add more water if needed.
7. Once ready, plate and enjoy with soup of choice. I promise you that you'll like it
Update and Tips:
Putting it in the freezer or fridge does not make the unripe plantain ripe but makes it soft and easy for peeling. Freezing it importantly stops the ripening process.
Put it in a nylon bag or any container before placing in the freezer.
You have to let it defrost before peeling to blend. I usually bring mine out a day before. Otherwise it will be a nightmare to peel. Also, just add a little water. Maybe 1 cup for about 2-3 plantains.
Also, add more water as needed whilst beating it on the fire.
You eat it with any soup you want and it taste like amala.
