Ingredients:
1 cup of plain flour
2 medium eggs
1/2 cup of evaporated milk ( peak or any other)
2 tablespoons of margarine
1 cup of water
1/4 teaspoon of salt
6 teaspoons of sugar
Ground pepper ( chilli or dry pepper)
Vegetable oil
Procedure for making pancakes in nigeria:
1. Put the margarine in small bowel and melt in a microwave or place the bowl in bot water to melt the margarine.
2. Break the two eggs into the melted margarine and beat until smooth.
3. Add 1/2 cup of water
4. Add flour and mix well until lumps dissolve
5. Add milk, sugar, salt, ground pepper, and the remaining half cup of water. Stir well or you can use a blender.
6. Add few drops or 1 teaspoon of vegetable oil. When hot, pour the pancake batter using a serving spoon like the one you use to dish soups. Using a spatula check the underside to be sure it has browned to your liking.
Flip the pancake so you can fry the top side.
You can get aleast 8 pancakes depending on the size you scoop.
