Coconut shuku shuku
Recipe
120g coconut chaff/flakes
3 egg yolks
30g granulated sugar
1/2 cup (64g) plain flour or bread crumbs.
Direction
In a bowl, add the coconut flakes, egg yolks and sugar together.
Mix very well until everything is well incorporated.
Squeeze into balls, the size of table tennis balls and roll each in flour or bread crumbs.
Place in the oven tray and bake in a preheated oven at 180c for 20 mins or till they turn slightly yellow all over.
