Flour, 350 grams

Salt, 1/2 tablespoon

Baking powder, 1 tablespoonful

Ingredients For the Nigerian Fish Rolls Filling

Vegetable oil - to be used for frying

Lightly fried mackerel fish (mashed and deboned)

Recipe Instruction.

1. Using either ovun, electric cooker or stove, you need to fry the fresh fish lightly in oil. Then remove the fish bones and mash secured.

2. Combine Baking powder, flour, margarine and salt in a bowl and mix very well. After you're sure they're mixed, add the egg and continue to mix.

3. Use a small water cup and pour some water bit by bit as you knead the dough 'til it becomes firm and smooth.

4. Place the flour dough on a flat table/board specially clean and made for fish pie making. Cut out the dough to small but considerate parts.

Now, using a rolling pin, alcohol bottle or any soft drink bottle, roll out the smaller doughs they become flat.

5. Cut the flat dough in rectangular shape.

6. Use a soup spoon to put the mashed fish on the flat dough and roll/fold. If you chose rolling you have to keep rolling it to get a desired length.

7. Heat the turkey oil (or any type of frying oil, including groundnut) until hot, though not burning hot. Don't allow it to start making the burning smell before you place the rolls inside.

8. The frying should be done on low heat and until the dough gets brown abd crusty, becoming a fish pie.

9. Fish pie ready? Yup!

10. Serve with soft drinks as snacks, favourably in the afternoon. In Nigeria it's served in the morning with hot drinks like brown or green tea.
