Baking: Semovita Cake Recipe


Freshly baked semovita cake


Recipe
500g butter-2 satchets
450g plain flour
300g semovita
250g sugar
6 large eggs
3 teaspoons baking powder
2 tablespoons vanilla essence
Half cup Gin
Mixed fruits.
Direction:
1. Pre heat your oven at 180oc
2. Sieve your flour and semovita.
3. In a bowl, cream the butter and sugar together until light and fluffy. The mixture will be almost whitish in colour. Add the eggs one at a time into the mixture, mix constantly until completely combined before adding the next egg. If it starts to curdle and tablespoons of flour and stir.
Add in the vanilla essence or flavour of the choice, and fold in the flour and semovita. Add in the gin and the fruits, and mix together. Then add in the baking powder.
Pour mixture in a greased baking pan and place in the preheated oven. Bake for like 30-40mins, check the cake using a skewer or toothpick, if it comes out clean without the cake sticking on it, it is done.
Remove from oven and leave to cool 4about 5 mins. Then remove from pan and place on a wire rack to cool.
Note:
To prevent cracking, knock the bottom of the pan down 2-3 times gently, like you do for Bread when you want to remove from pan.
Also, don't over-mix your batter and work with moderate heat.
