How to Make Asaro Yam Porridge

A spoon full Vegetable oil
A spoon full Palm oil
Crayfish
Knorr
Sazon
Salt
Black pepper
Curry
Kini dry fish ( mackerel would work well too, or any eja kika)
2 Bell Pepper
4 Roma Tomato
4 rodo
1 purple onion

Crush you peppers onions and tomatoes and rodo, you want it chunky and not smooth
Heat your palm oil and vegetable oil together in a pot for about 5 minutes
Peel and slice your yam in medium pieces
Add your crushed pepper mixture to the heated oil and all to fry, add all your spices, crayfish and salt. Allow to cook for 20 minutes on medium heat
Add your peeled yam and 2 cups of water, cover and bring to a boil for 15 minuets on medium heat
Add your Kini fish and cook for another 10 minutes

How to Prepare Cow Leg Pepper Soup

Decide to treat myself nicely. Ehen, me sef na person pikin. Loolz. Cowleg pepper soup with agidi. Join me jo.

Recipe

Precooked, washed and cleaned cow leg cut to size

5 tomatoes

3 shonbo

4 ata rodo

1 meduim onions

3 tsp chat food pepper

soup spice.

Salt

Maggi

Method

Wash your cowleg properly

Place in a pot, salt and maggi and start cooking

Wash and blend your tomato, peppers and onions.

Cook the blended mixture to reduce the water.

When the cowleg is half cooked, Add the tomato mix and the peppersoup spice and leave to cook till done.

Taste for salt and adjust to taste.

How to Make Okra Soup Draw

Follow the simple recipe if you want to make okra soup draw.

Ingredients:

Okro,

Ugwu,

Smoked fish,

Dried fish,

Titus fish,

Cow kidney,

Cow skin (kpomo),

Crayfish,

Pepper,

Onion,

Locust beans (iru),

Maggi ( knorr chicken), salt & palm oil

Method

Bring water to boil (in it you already have your pepper and finely diced/chopped onion, crayfish & locust beans).

Then the kidney & cowskin (previously cooked).

Few minutes later, add the ugwu, palm oil, maggi and salt to taste (I allowed this to cook for some minutes) added the shredded dried and smoked fish (brought this in late as I don't want it to "scatter" in the process...lol)

I allowed this to cook for few minutes on a low heat (I want to maintain my "green").

The okro comes in last, allowed to cook for some minutes on low heat.

How to Make Egusi Soup with Palm Oil

Plenty oil is what makes party egusi soup in Lagos. Want to try one. It's simple.

Assuming you know the basic ingredients from here. (or check here)

My Egusi for Party Method:

I pour in my palm oil in the pot, pour in the diced onions when the oil is hot a little bit, then pour in my blended pepper a minute after.

Covered the pot and add my smoked catfish, cow leg, chicken, red crayfish, maggi, salt and chicken stock all together.

Waited for 10 min and pour in my grinded melon.

I have a funny way of mixing my dried grinded melon, I do mix dried grinded melon, egg and diced onions together to make the melon stand one by one in the stew.

Covered it and pour in my kale vegetable 10 mins later. Then I adjust my stove to low to make it simmer.

How to Cook a Sumptuous Soup with Just 250 Naira

Crayfish, palm oil, dried cayenne pepper, salt and seasoning were already available in my kitchen.
And it went down with eba.

How to Make Beef Tips and Gravy Over Rice

Ever tasted the delicious rice and beef gravy recipe. Today you can do it without much trouble.

Diced beef,

Flour (little),

Red and green bell pepper,

carrot,

onions,

salt,

curry,

thyme,

ginger,

knorr,

egg,

green beans and coconut milk.

Method:

Boil the diced meat with spices.

As the meat boils, add the coconut milk and allow to cook with the meat.

Add 2 cups of water and season again to taste before sprinkling little flour into it and allow to thicken a bit.

Pour your chopped veggies and boiled egg. Leave for 3 mins to avoid the veggies over-cooknig.

Note: No oil.

How to Make Onion Sauce/Soup from Scratch

My tasty onion sauce recipe. Bet you'll fall in love after you try it just once.

Ingredients:

3 big onion balls,

5 pieces fresh hard tomatoes,

Fresh pepper,

2 cubes of maggi,

Olive oil or vegetable.oil,

Utazi (teji) leave,

All purpose seasoning (any type/brand)

Fresh fish or goat meat. I also use chicken.

Preparation Method:

1. Wash, season and cook your fish or meat till tender leaving little water in it.

2. Cut your onions and tomatoes in big, to be visible in the pot.

3. Heat the oil in a seperate pot and add 3 onions, allow to fry for 30 seconds.

4. Add the tomatoes and pepper, allow to dry up the water from the tomatoes.

5. Add your cooked meat or fish and seasonings, allow to simmer for 20 seconds and finally add your sliced utazi leave, turn and bring down from cooker.

You can eat with rice or yam.

How to Make Ayamase Nigerian Stew

Ayamase is an ofada stew made with green tatase/tatashe (Red bell pepper) and Ata rodo (Scotch Bonnet) with onions.

You blend the Ata rodo, Tatashe and onions altogether and pour in pot to dry up the water.

Bleach your palm oil and pour the pepper inside.

Add your salt and maggi to taste , iru/dawadawa/locust beans (optional), and you add your diced fried/grilled/boiled assorted meat and steam up.

Food is ready.

Note: It depending on your taste whether you like it boiled or fried and whether you like it spicy or not.

SECOND METHOD:

Boil your assorted meat and dice them.

Defrost your spinach first (If you buy the frozen one from), then blend some amount of tatase, rodo and onions (you may also add little plum).

Heat up your palm oil and add your blended pepper, maggi, salt and your locust beans/iru/dawadawa.

Leave it to cook then add your assorted diced meat. Leave it to heat up and add up your spinach, stir it and leave it to steam up for another few mins.

How to Make International Egusi Soup (Egusilistic Soup)


I promised you that I was going to teach you the ultimate step by step international egusi soup, right?

Today is the day. Go sip some water, come back let's start the journey of the best egusi soup recipe ever known internationally.
It is packed full of different flavours from Stock fish, smoked chicken, beef, basil and crayfish.
Kpomo and shaki too are also representing.
If you want a substitute to bush meat flavour in egusi soup try using smoked chicken rather than smoked turkey. I also added basil and spinach to this sumptuous soup.
And if you crave the soup hot and spicy like mine, then pepper should be plenty.


So if you are still struggling with getting a lumpy Egusi then cook with me as I have an easy way to this even though I don't mind if my Egusi is lumpy or not.
And yes, this will be going down well with PLANTAIN AMALA.
Ingredients:
1.Smoked Chicken:

2. Stock fish sessoned and boiled:

3. Boil the smoked chicken for 20 mins and set aside.

Grilled meat and set aside.
5.
Peppers, long sweet red pepper and onions. You can use any red bell peppers. NO TOMATOES please.

Grounded egusi.
7.
Set peppers to blend

In a pot over heat, add the chicken and stock fish with its juice.

Pour the blended peppers in the meat

Add palm oil straight away.
11.
Add crayfish
12.
Add knorr chicken. Notice I haven't used salt? I didn't at all as my meats are well seasoned.

Sqaush it.

Stir well.

Let it boil/ cook for 25 mins.

Now mix your egusi with a cup of water or stock.

Mix it to a paste.
18.
Now pop it into the microwave.

Start with 30sec and then 4mins.

It will look like this after mins. Don't panic if you don't have the use of microwave. Just make sure your meat sauce has enough juice in it to allow your egusi paste cook freely once its cut in like little balls.

See how the huge lumps are??
Adding onions to your paste also gives you the lumpy effect.
Note: You don't have to fry using this process, just use spoon to cut the egusi in or use your clean hands.

Now pour the egusi in the sauce.

Let it cook for 10mins in the shape it is. Don't break it just yet. And low the heat while you are getting the vegetables ready.

Wash the spinach

Drain and chop.

Transfer to a bowl and add boiling water.

Like so.

Drain immediately and set aside. I add hot water to my spinach to avoid RIVER NIGER in my soups.

Now wash and chop the basil leaves. No need to steam this.

Here is the spinach and fresh basil.

Now add your vegetables into the pot of sizzling egusi.

Now Stir. You will be the one struggling to break this Lumps now lol.
You can also blend in onions to mix grounded egusi for lump sakes and you so don't need to fry it. I have tried several ways even using an egg. This is the BEST way for me if I want lumps.

Off the heat once your vegetables have been in for 5 mins. You don't want to over cook it.

Then you have a beauty there. Now decide what to wack this with.

Off course I chose plantain amala.

After blending my thawed/defrosted green plantain. Now turning over a heat.

Keep turning, low heat if it's too much. I added a bit more water as it was hard and kept turning till my desired texture.

Plantain Amala is set. Time to eat.
