Chicken Satay Skewers with Peanut Sauce - Recipe


Chicken satay skewer with peanut sauce (ose oji) served with cucumber

Recipe:

A

4 skinless boneless chicken breast cut into cubes

4 tbps soy sauce

1 tbps spoon corn starch

2 garlic cloves chopped

1 ginger chopped

1 cucumber diced.

1 cube knor

B

Peanut sauce

2 tbsp veg oil

1/2 onion, finely chopped

1 garlic clove, finely chopped

4 tbsp crunchy peanut butter

4-5 tbsp water

11/2 tbps chilled powder or to your desired taste.

Add all ingredient in A above, cover and leave to marinate in the refrigerator for at least 2 hrs.

Soak bamboo skewer in cold water at least 30 min

Thread the chicken pieces onto skewer.

Transfer the skewer to a griddle pan and cook under a preheated grill for 3-4 min turn and repeat on the other side.

To make sauce, heat oil in a sauce pan, add onion and garlic and cook over medium heat, stirring frequently until soft and fragrant. Add peanut butter, water, and chili powder and simmer for 2-3 min until soften and thinned. Serve warm. Enjoy.......
