How to make Ukpaka/Ugba pepper sauce - garden egg sauce recipe

Scotch bonnet pepper/habenero

Red peppers

Ukpaka/Ugba

Red oil

Onions

Maggi

1. Fry the onions and peppers for like 3 minutes while stirring.

2. Add your Maggi and salt to taste

3. Add the Ugba last. (If you buy Ugba from african store, be sure to soak in warm water and salt for a little bit to remove the sour/bitter taste).

4. Simmer everything together for another 5 minutes (while stirring occasionally so it wouldn't burn).

5. Top with Garden egg leaf or any leaf to give it the slight bitter taste from hawkers. (optional).

You can also add dry fish or kpomo to the sauce.
