Learn the simplest way of preparing Nigerian cake.
Ingredients:
250g butter-1 satchet
500g plain flour
250g sugar
4 eggs
2-3 teaspoons baking powder
2 tablespoons vanilla essence or any flavor of yout choice
Gin or any preservatives of your choice.
You can add fruits if you like.
OR
1 tin milk level sugar
1 satchet butter
3 tin milk flour
4 eggs
Recipe Directions:
1. Pre heat your oven at 180oc
2. Sieve your flour
3. In a bowl, cream your butter and sugar together until light and fluffy. The mixture will be almost whitish in colour.
4. Add the eggs one at a time into the mixture, beating constantly until completely combined before adding the next egg.
5. If it starts to curdle add tablespoons of flour and stir.
6. Add in your vanilla essence or flavour of your choice, and fold in your flour. Add in your gin and the fruits, and mix together.
7. Then add in your baking powder. I always add this last because it begins its work immediately. If you add during earlier, your mixture will start rising and may later collapse before you put in the oven.
8. Pour mixture in a greased baking pan and place in the preheated oven. Bake for like 30 mins, check your cake using a skewer or toothpick, if it comes out clean without the cake sticking on it, it is done.
9.Remove from oven and leave to cool for about 5 mins. Then remove from pan and place on a wire rack to cool.
Special Note:
To prevent cracking, knock the bottom of the pan down 2-3 times gently like you do for bread when you want to remove from pan.
Also, dont overmix your butter and work with moderate heat.
